Cilantro Rice  
Put 1/4 c. of canola oil in a 4qrt pot and fry 2 cups of rice, 4 garlic cloves, and 1/2 onion until browned. Chop 1/2 bunch of cilantro and add to 4 cups of water and add to pot. Put in 3 or 4 tbsp of Pollo Maria bouillon (test the desired saltiness) and stir until boiling. Cover pot and simmer on low for 20 minutes or until rice is tender.

I made chicken enchiladas tonight for dinner with cilantro rice. I changed the recipe a bit, made half the amount, didn't have garlic and didn't have the bouillon, but it tasted great. I also planned to add lime instead of salt at the end, but forgot. still yummy and easy!

chipotle soon?
